Walnuts may be good for the gut and help promote heart health

In a randomized, controlled trial, researchers found that eating walnuts daily as part of a healthy diet was associated with increases in certain bacteria that can help promote health. Additionally, those changes in gut bacteria were associated with improvements in some risk factors for heart disease.

Badass Black Eyed Peas

I make black eyed peas once a year for New Year’s Day.  For good luck and good leftovers.  Every year I always say to myself,

“Self.  You need to write the recipe down.”

And each and every year I forget.  This year however is different.  A friend asked for the recipe.  So I actually sat my butt down into my chair and started writing.  I think my 2020 version of this recipe is better than in years gone by.  But I can’t be absolutely certain because I never wrote down any other versions of this annual bean concoction.  What I am certain of is the 2020 version is Badass.

Before we get to the recipe there’s a few odd tips and tricks you need to know.

  • The beans needs to simmer for several hours.
  • The beans get an overnight soak in filtered water and you will change the water several times.
  • Everyone in the pool.  I don’t cook the beans separately for this dish.
  • Unlike other chili recipes this recipe has hints of chili.  Don’t try to make this a chili because it’s not chili.

So now that you know not to call these beans a chili here’s how to make it Badass.

4 slices center cut bacon
1 T extra virgin olive oil
1 medium sweet onion, diced
1 stalk celery, diced
1 large green pepper, diced
3 cloves garlic, minced
1 tsp each smoked paprika, chili powder
1 T Mexican oregano
1 T cumin
1 qt low sodium chicken broth
3 T tomato paste
1 lb black eyed peas
1 lb ground turkey 85/15
Salt & pepper to taste
Cayenne pepper to taste

  1. Place the dried beans into a stock pot large enough to hold the beans when fully plumped up.  Rinse the beans with water several times.  Fill the pot with fresh water and soak overnight.
  2. In the morning drain then add fresh water to the beans. Change the soaking water at least twice.
  3. In a large stock pot fry the bacon in the olive oil until the strips are crisp and the fat is rendered.
  4. Saute the onion, celery, and green pepper until softened about five minutes.  Add the garlic and saute another minute.
  5. Add the turkey and brown, breaking up the clumps as you go.
  6. Toss everything else into the pool.  Spices, tomato paste, broth, and beans.
  7. The black eyed peas should be drained and the chicken broth needs to barely cover all of the ingredients.
  8. Bring to a boil then simmer for several hours with the pot partially covered.
  9. Check the pot and stir occasionally.  Add more broth as the peas cook and the dish thickens.
  10. Serve with grated cheese, sour cream, and your favorite hot sauce.
  11. Yum.  Makes about 10-12 servings.

More odd tips

Don’t add salt until the beans are cooked through and soft.  There is plenty of salt in the chili powder and broth so salt last.  As you adjust the seasonings you may want to add more chili powder and/or oregano.  I tend to use garlic powder (my less than top secret favorite flavor enhancer).

This dish tastes better on day two.

For my vegan and vegetarian readers this dish is neither vegan nor vegetarian.  Feel free to make your own veggie version with a nice organic vegetable or mushroom broth.

Zucchini, Corn & Red Pepper

“How did you make this?”

When this question is asked at the table I tend to ramble on about the types of oils and other ingredients in the dish.  Over time I’ve come to understand that our guests don’t want to know what’s in the dish but rather how did I make this?

It’s a clear sign I need to write it down.  So I did.

  • two medium to large zucchini, sliced into one half inch coins
  • half one large red pepper, diced
  • one third sweet onion, diced
  • one cup frozen corn
  • one clove garlic, minced
  • grape seed oil
  • extra virgin olive oil
  • pinch dried basil
  • salt and pepper to taste
  1. Heat approximately one tablespoon of grape seed and olive oils over medium heat in a frying pan large enough to hold the squash without overlapping.
  2. Add the squash coins, flip the heat to high and fry until the squash is golden brown and caramelized.
  3. Flip the squash and repeat.
  4. When both sides of the squash are browned and caramelized remove from the pan, place into a bowl and set aside.
  5. Reduce heat back to medium, add a few dashes of EVO, onions, and red pepper.  Saute for about five minutes.
  6. Add the corn and saute for another five minutes.
  7. Add garlic and swiftly saute for about a minute.
  8. Add the reserved squash back to the pan, pinch of basil, salt and pepper to taste.
  9. Gently mix together and remove from the heat.
  10. Serve immediately or if allowed to fully cool, rewarm over low heat for a few minutes taking care not to overcook the squash.

Taking time off from work is both a blessing and a curse. I’ve taken long weekends where by the final day I am ready to head back to the office and get back to work. This compulsive urge of needing to work has been with me my entire life. My parents’ generation of immigrants, my ethnic heritage, my upbringing all contributed to my strong work ethic. I was quite surprised when recently all of this changed. It’s not that I’ve lost my work ethic or anything like that. I still work hard but I’ve also found other things to do with my time. One of the projects on this extended weekend was to de-clutter  and the target was my collection of saved recipes. Like any other household item the strategy was brutally simple: keep or toss. It didn’t take long to determine that most of the recipes I’d been keeping for possible future meals would be tossed.  Here’s some of the things that you learn about yourself while de-cluttering your recipe collection:

  1. I had saved recipes and old newspaper clippings since 1976.
  2. I never used any of those recipes.
  3. I’ve known for a long time that what I cook and eat currently is a lot different than what I used to cook and eat.  Most of the saved recipes are dishes that I would not cook now.
  4. An entire folder of pork and lamb recipes got tossed.  I eat pork on rare occasions and can’t even remember the last time I had lamb.
  5. Groupings of old newspaper articles eventually became cookbooks for their authors.  I have these same recipes in the cookbooks from the same authors in my cookbook collection.  Why did I keep the old clippings?
  6. Thinning out the cookbook collection is next on the de-clutter list.

I was literally tossing out everything until I found this:

At first I didn’t recognize what I was holding in my hand.  It took a few minutes to realize I was holding an old recipe that was written in my Father’s handwriting.  After this discovery the pace of my purge slowed.  I didn’t want to accidentally discard a cherished memory.

Memories hidden from view that were here with me waiting to be uncovered and woven back into my story.  Have I ever mentioned my Father was one hell of a cook?

 

Roasted Cauliflower Frittata

Sometimes you have odds and ends in the fridge.   This was the inspiration for Scraps Frittata which in the end turned out fine.  The other night at a bring a dish dinner I was asked to bring some Roasted Cauliflower with Parmesan for a side veggie.  Our gracious host well known for his blunt honesty said,

“Maybe we shouldn’t have microwaved the cauliflower.  The texture was different.”

I agreed.  The veggie was kind of mushy.  Maybe I shouldn’t have made the cauliflower earlier, covered the dish with aluminum foil, then microwaved it for serving.  This veggie is obviously best served immediately from the oven.

Our host who does not like leftovers besides Good Pie didn’t want the rest of the veggie so I took it back home.  What do you do with about 3 cups of leftover mushy roasted cauliflower? 

  • 2 T EV olive oil
  • 1/2 medium sweet onion diced
  • 2 C red potatoes small dice
  • 6 eggs
  • 3 cups Roasted Cauliflower with Parmesan
  • shredded sharp Cheddar cheese about a cup
  • shredded Monterrey Jack cheese about a half cup
  • Parmesan cheese grated, a couple of Tablespoons
  • Dried thyme, healthy pinch
  • Salt and pepper
  1. Heat the olive oil in an 10 inch non-stick pan.
  2. Add the potatoes and cook until nearly cooked through, about 10-15  minutes medium heat.
  3. Add the onion and saute for five minutes.
  4. Add the thyme, salt, and pepper.
  5. Spread the cauliflower over the potato/onion mixture.
  6. Sprinkle the cheeses over the veggies.
  7. Beat the eggs.  Pour over the vegetable mixture.
  8. Preheat your broiler.
  9. Allow the frittata to sit over a very low flame until set.
  10. Place the pan under the broiler to brown the top.
  11. Remove from the broiler and place the frittata on a serving plate.
  12. Serve warm or cold.  Makes about 6 servings.
  13. Yum.
